    Pad Thai Noodles – 200g – 250g
    Gochujang – 1/4 Cup
    Soy Sauce – 1 Tablespoon
    Rice Vinegar – 1 Tablespoon
    Sesame Oil – 1 Tablespoon
    Plum Sauce – 1 Tablespoon
    Sweet Onion – 3 Tablespoons (finely grated)
    Sugar – 2 Teaspoons
    Sesame Seeds – 1 Teaspoon
    Cucumber – 1 Small

    *Makes 2 large portions or 3 regular sized portions


    1. Bring a pot of water to a boil.
    2. Cook noodles until soft but slightly firm. Add a cold splash of water to the pot each time it comes to a boil to keep noddles from overcooking.
    3. Drain the noodles and rinse them in ice water to get all the starch off. Drain the noodles again and replace with fresh water. Leave it for about 5 minutes while you make the sauce.
    4. Mix gochujang, soy sauce, vinegar, sesame oil, plum sauce, grated onion, sugar and a 1/2 teaspoon of sesame seeds in a small bowl.
    5. Slice cucumber the long way to resemble the size of the noodles.
    6. Drain the noodles well.
    7. Add the sauce and cucumbers to the noodles and mix it all up!
    8. Garnish with the last of the sesame seeds, add a few more cucumbers and enjoy!
