Ingredients:
Pad Thai Noodles – 200g – 250g
Gochujang – 1/4 Cup
Soy Sauce – 1 Tablespoon
Rice Vinegar – 1 Tablespoon
Sesame Oil – 1 Tablespoon
Plum Sauce – 1 Tablespoon
Sweet Onion – 3 Tablespoons (finely grated)

Directions:
- Bring a pot of water to a boil.
- Cook noodles until soft but slightly firm. Add a cold splash of water to the pot each time it comes to a boil to keep noddles from overcooking.
- Drain the noodles and rinse them in ice water to get all the starch off. Drain the noodles again and replace with fresh water. Leave it for about 5 minutes while you make the sauce.
- Mix gochujang, soy sauce, vinegar, sesame oil, plum sauce, grated onion, sugar and a 1/2 teaspoon of sesame seeds in a small bowl.
- Slice cucumber the long way to resemble the size of the noodles.
- Drain the noodles well.
- Add the sauce and cucumbers to the noodles and mix it all up!
- Garnish with the last of the sesame seeds, add a few more cucumbers and enjoy!
