Breakfast Quesadilla

    Equipment:

    Cutting Board, Knife, Small Bowl, Frying Pan, Spatula, Chop Stick

    Ingredients:

    Eggs – 3
    Cottage Cheese – 2 Spoon fulls
    Tomatoes – 6 cherry or half a large tomato
    Onion – 1/2 small yellow
    Avocado Oil – 1 Teaspoon
    Salt – A few twists
    Pepper – A few twists
    Butter – 1/2 Tablespoon
    Medium Flour Tortillas – 2
    Cheese (shredded) – A little bit
    Avocado – 1/2
    Salsa

    *This recipe makes 2 quesadillas.

    Directions:

    1. Dice the onion and tomatoes.
    2. Sauté the onion and tomatoes over medium heat in avocado oil. Add salt and pepper to taste and set aside.
    3. Whisk eggs and cottage cheese in a small bowl.
    4. Melt butter on a frying pan then add the egg mixture and continuously stir the mixture with a chopstick while the pan is on low heat. It could take a few minutes. Set aside.
    5. Assemble the wrap by shredding cheese on half of the wrap, add the egg and veggies then shred more cheese on top and fold in half.
    6. Add a little butter to a frying pan on medium heat. Cook each side of the quesadilla for about 2 minutes or until crispy.
    7. Enjoy with avocado and salsa!
