Equipment:
Pot, Wooden Spoon, Parchment Paper, Chop Sticks or Skewers, Thermometer
Ingredients:
Apples – 5
Brown Sugar – 1 Cup
Light Corn Syrup – 1/2 Cup
Unsalted Butter – 2 1/2 Tablespoons
Heavy Cream – 3/4 Cup
Salt – 1/4 Teaspoon
Vanilla – 1/2 Tablespoon
Directions:
- Bring some water to a boil. Pour the water into a bowl and soak each apple for about 10 seconds. Then vigorously dry the apples to wipe off their outer waxy layer.
- Stick chop sticks in the top of the apples.
- Add brown sugar, corn syrup, butter, cream and salt to a pot and cook on medium heat stirring ingredients until the butter is melted, about 3.5 minutes.
- Let the caramel bubble and cook until the temp reaches 235- 240°F, about 8 minutes.
- Turn off the heat and add in vanilla.
- Let the caramel sit for about 10 minutes until the caramel temp is 190°F.
- Dip the apples in the caramel. If the caramel is falling off, dip a second time.
