Equipment:
Mixing Bowl, Hand Mixer or Spoon, Measuring Spoons & Cups, 2 Baking Sheets, Cutting Board, Knife
Ingredients:
Butter – 1 Stick (1/2 Cup)
Brown Sugar – 1 Cup
Egg – 1
Vanilla Extract – 1 Teaspoon
Milk – 2 Tablespoons
Baking Soda – 1/2 Teaspoon
Salt – 1/2 Teaspoon
Flour – 2 1/4 Cups (I used almond flour)
Cherries – 1/2 Cup
Coconut – 1/2 Cup
Directions:
- Let the butter sit out for 2 hours to soften or place in a toaster oven for 10 minutes at 150°F.
- Dice up the cherries. I just cut around the pit and set aside.
- Add the butter and brown sugar to a bowl and mix until fluffy.
- Preheat the oven to 375°F.
- Add an egg, vanilla, milk and blend.
- Fold in baking soda, salt, flour, cherries and coconut.
- Use a little scoop to make even balls of cookies on an ungreased cookie sheet.
- Bake for 10-12 minutes or until golden.
- Let cool and enjoy!!
