Granola

    Equipment:

    Bowl, Spoon, Measuring Cups, Measuring Spoons, Spatula, Baking Sheet, Parchment Paper, 2 Large Mason Jars

    Ingredients:

    Old Fashioned Rolled Oats – 4 Cups
    Raw Nuts – 1 1/2 Cups
    Coconut – 1/2 Cup
    Salt – 1 Teaspoon
    Cinnamon – 1/2 Teaspoon
    Melted or Soft Coconut Oil – 1/2 Cup
    Maple Syrup – 1/2 Cup
    Vanilla  – 1 Teaspoon
    Dried Fruit (Craisons, Yellow Raisons) – 2/3 Cup

    *Makes enough to fill 2 large mason jars.

    Directions:

    1. Mix oats, raw nuts, coconut, salt and cinnamon in a large bowl.
    2. Melt coconut oil.
    3. Preheat oven to 350 degrees.
    4. Line baking sheet with parchment paper.
    5. Pour coconut oil, maple syrup and vanilla over oats and nuts, mix well.
    6. Bake for about 12 minutes.
    7. Take out granola, add in dried fruit and mix around.
    8. Bake for another 12 minutes.
    9. Let granola cool for at least 45 minutes, then transfer to mason jars and enjoy!
