Equipment:
Baking Sheet, Large Bowl, Spoon, Measuring Spoons, Bread Pan, Parchment Paper, Small Bowl
Ingredients:
Ripe Bananas – 6
Honey – 1/4 Cup
Coconut Oil – 1/4 Cup
Eggs – 2
Vanilla – 2 Teaspoons
Four – 1 1/2 Cups
Baking Soda – 1 1/2 Teaspoons
Salt – 2 Teaspoons
Chocolate Chips – 1 Cup Optional!!
Cooking Spray
Sugar – 2 Tablespoons
Cinnamon – 1 Teaspoon
Directions:
- Preheat the oven to 350°F.
- Once the oven is warm place 6 ripe bananas with the skin on, on a cookie sheet and bake for 15-20 minutes until their skin is black.
- Let the bananas cool for about 10 minutes and transfer to a large bowl. The bananas should be watery!
- Mix in the honey, coconut oil, eggs and vanilla until there are just a few little chinks of bananas (if you like chunky banana bread).
- Add in the flour, baking soda and salt until just mixed.
- Stir in chocolate chips if you want.
- Cover the bread pan in parchment paper and spray with cooking spray.
- Pour the batter into the bread pan.
- In a small bowl mix the sugar and cinnamon and sprinkle this on top of the loaf.
- Bake for about 1 hour until the middle doesn’t jiggle jiggle.
- Let cool and enjoy with a little butter!!
