Healthy Banana Bread

    Equipment:

    Baking Sheet, Large Bowl, Spoon, Measuring Spoons, Bread Pan, Parchment Paper, Small Bowl

    Ingredients:

    Ripe Bananas – 6
    Honey – 1/4 Cup
    Coconut Oil – 1/4 Cup
    Eggs – 2
    Vanilla – 2 Teaspoons
    Four – 1 1/2 Cups
    Baking Soda – 1 1/2 Teaspoons
    Salt – 2 Teaspoons
    Chocolate Chips – 1 Cup Optional!!
    Cooking Spray
    Sugar – 2 Tablespoons
    Cinnamon – 1 Teaspoon

    Directions:

    1. Preheat the oven to 350°F.
    2. Once the oven is warm place 6 ripe bananas with the skin on, on a cookie sheet and bake for 15-20 minutes until their skin is black.
    3. Let the bananas cool for about 10 minutes and transfer to a large bowl. The bananas should be watery!
    4. Mix in the honey, coconut oil, eggs and vanilla until there are just a few little chinks of bananas (if you like chunky banana bread).
    5. Add in the flour, baking soda and salt until just mixed.
    6. Stir in chocolate chips if you want.
    7. Cover the bread pan in parchment paper and spray with cooking spray.
    8. Pour the batter into the bread pan.
    9. In a small bowl mix the sugar and cinnamon and sprinkle this on top of the loaf.
    10. Bake for about 1 hour until the middle doesn’t jiggle jiggle.
    11. Let cool and enjoy with a little butter!!
