Equipment:
2 Mixing Bowls, Spoon, Fork or Hand Mixer, 9×5 Inch Bread Pan, Measuring Cups, Measuring Spoons
Ingredients:
Flour – 1 1/3 Cups
Baking Powder – 2 1/4 Teaspoons
Baking Soda – 1/4 Teaspoon
Salt – 1 1/4 Teaspoons
Yogurt – 1 Cup (I used vanilla banana but any non-greek yogurt works)
Egg – 1
Vegetable Oil – 1/4 Cup
Honey – 1/4 Cup + 1 Tablespoon
Old Fashion Rolled Oats – 1 Cup + 2 Tablespoons
Oat Milk – 3/4 Cup
Cooking Spray or Butter – Enough to coat a bread pan
Directions:
- Grease bread pan with cooking spray or butter.
- Sprinkle 1 tablespoon of oats and tip the pan to coat all sides.
- Add flour, baking powder, baking soda and salt to a mixing bowl and mix with a spoon (don’t over-mix).
- Preheat the oven to 375 degrees.
- In a separate bowl, use the hand mixer on low and beat yogurt, egg, oil, honey and 1 cup of oats until well combined.
- Once mixed, stir in milk (with hand mixer on low).
- Add the wet mixture to the dry mixture and stir with a spoon.
- Pour batter into bread pan making sure to spread the batter to all the edges of the pan.
- Bake the loaf for about 40 minutes, until the top is slightly browned and a toothpick comes out of the loaf clean.
- Once done baking, brush the top of the loaf with honey and sprinkle with 1 tablespoon of oats.
- Enjoy with avocado toast, chicken salad or butter!
