Pickled Cabbage


    Mandolin or Food Processor, Cutting Board, Knife, Measuring Cups, Measuring Spoons, Wooden Spoon


    Purple Cabbage – 2 Cups
    Water – 1 1/4 Cups
    Apple Cider Vinegar – 1 1/4 Cups
    Salt – 1 1/2 Teaspoons
    Sugar – 2 Tablespoons
    Red Pepper Flakes – A Few Shakes
    Garlic – 2 Cloves, Sliced
    Coriander – 2 Teaspoons
    Peppercorns – 12


    1. Slice cabbage and garlic into thin shreds, keep separate.
    2. Bring water to a boil.
    3. Take the water off the heat and add vinegar, salt, sugar, red pepper flakes, garlic, coriander and peppercorns. Stir until combined (this will be your brining liquid).
    4. Fill each mason jar with cabbage.
    5. Pour brining liquid over cabbage in the mason jars, try to evenly distribute the garlic and peppercorns.
    6. Let sit in the fridge for at least 2 hours.
    7. Enjoy on a yummy bao sandwich!!
