Pico De Gallo

    Equipment:

    Food Processor, Cutting board, Knife, Spatula, Serving Bowl

    Ingredients:

    Tomatoes – 4 small or 8 cherry tomatoes
    Yellow Onion – 1/4
    Jalapeños – 2
    Green Bell Pepper – 1/4
    Lime – A few squeezes

    *Makes enough to fill a medium sized bowl.

    Directions:

    1. Cut the stems off of the jalapeños.
    2. Add tomatoes, onion, jalapeño and green pepper to the food processor and pulse about 10 times until veggies are diced.
    3. Transfer mixture to a bowl.
    4. Cut a lime in half and squeeze the juice from half of the lime onto the veggies.
    5. Mix well and enjoy with tortilla chips or on top of a shrimp taco!
