Equipment:
Cutting Board, Knife, Measuring Spoon, Pot, Food Processor, Rolling Pin, Rolling Mat or Flat Surface, Pizza Cutter, Dough Scraper, Frying Pan
Ingredients:
Green Plantains – 2
Salt – 1 Teaspoon
Corn Starch or Tapioca Starch- About 1/4 Cup
Avocado Oil or Coconut Oil – About 1 Teaspoon
*Makes about 7-10 tortillas depending on the size of your tortilla
Directions:
- Bring a pot of water to a boil.
- Cut the ends off of the plantains, then cut into 4 equal pieces, then slice those pieces in half the long way so they look like little half watermelons.
- Add the cut plantains to the boiling water and cook for 15 minutes.
- Remove the plantain pieces from the pot. Cool slightly and take the peels off.
- Mix the plantains and salt in the food processor until it makes a ball, about 30 seconds.
- Dust a flat surface and rolling pin with corn starch and leave a pile of starch on the side for when the dough gets sticky.
- Mold the dough into a circle with your hands and roll it out with a rolling pin as thin as you can!
- Use a pizza cutter to make about 7 circles (or close to a circle) tortillas.
- Turn your stove to medium heat, add a dash of avocado oil to a frying pan and fry each side of every tortilla for 3 minutes.
- Enjoy warm with any delicious taco filling!
