Potato Stacks


    Mandolin, Bowl, Knife, Cutting Board, Muffin Trays

    *Makes about 6 stacks


    Potatoes – 1 to 2
    Garlic – 1 Clove (Diced)
    Dijon Mustard – 1/2 Tablespoon
    Apple Cider Vinegar – 1/2 Tablespoon
    Oregano – 2 Tablespoons
    Thyme – 1 Tablespoon
    Red Pepper Flakes – A Few Shakes
    Parmesan – 2 Tablespoons (Optional)
    Olive Oil – 2 Tablespoons
    Salt – A Few Twists
    Pepper – A Few Twists


    1. Clean the potatoes.
    2. Preheat the oven to 400°F.
    3. Slice the potato with a mandolin into 1/8 of an inch slices and set aside.
    4. Dice up the garlic and mix  it with the rest of the ingredients in a bowl.
    5. Toss the potato slices in the olive oil mixture, make sure they are well coated.
    6. Spray the muffin trays.
    7. Stacks the potato slices in the muffin trays so the stacks are even.
    8. Cover the muffin tray in tin foil and bakes for 30 minutes.
    9. Remove the foil and bake for another 20 minutes until the edges are golden brown.
    10. Let cool and enjoy!
