Equipment:
Mandolin, Bowl, Knife, Cutting Board, Muffin Trays
*Makes about 6 stacks
Ingredients:
Potatoes – 1 to 2
Garlic – 1 Clove (Diced)
Dijon Mustard – 1/2 Tablespoon
Apple Cider Vinegar – 1/2 Tablespoon
Oregano – 2 Tablespoons
Thyme – 1 Tablespoon
Red Pepper Flakes – A Few Shakes
Parmesan – 2 Tablespoons (Optional)
Olive Oil – 2 Tablespoons
Salt – A Few Twists
Pepper – A Few Twists
Directions:
- Clean the potatoes.
- Preheat the oven to 400°F.
- Slice the potato with a mandolin into 1/8 of an inch slices and set aside.
- Dice up the garlic and mix it with the rest of the ingredients in a bowl.
- Toss the potato slices in the olive oil mixture, make sure they are well coated.
- Spray the muffin trays.
- Stacks the potato slices in the muffin trays so the stacks are even.
- Cover the muffin tray in tin foil and bakes for 30 minutes.
- Remove the foil and bake for another 20 minutes until the edges are golden brown.
- Let cool and enjoy!
