Equipment:
Cutting Board, Large Knife or Heavy Pan, Mixing Bowl, Spoon, Measuring Spoons
Ingredients:
English Cucumber – 1
Salt – 1 Tablespoon
Garlic – 2 Cloves
Grapeseed or Vegetable Oil – 1 Tablespoon
Ginger – 1/2 Tablespoon
Soy Sauce – 1 Tablespoon
Sugar – 3/4 Teaspoon
Chili Oil – 1 Tablespoon
Gochujang – 1/2 Teaspoon
Rice Wine Vinegar – 1/2 Tablespoon
Sesame Oil – 1/2 Tablespoon
Sesame Seeds – For Garnish
Directions:
- Peel cucumber if you are using an American Cucumber if not just wash the outside cut in half the long way and smash the cucumber into a cutting board.
- Once smashed, slice the cucumber into bite size pieces and place in a bowl with 1 tablespoon of salt. Let it sit for about 30 minutes.
- In the meantime dice up the garlic and fry it in 1 tablespoon of oil, about 5 minutes.
- In a bowl mix the garlic, ginger, soy sauce, sugar, chili oil, gochujang, rice wine vinegar and sesame oil.
- Drain all the water from the salted cucumbers.
- Add the sauce and mix well.
- Top with sesame seeds and enjoy!!
