Zucchini Muffins

    Equipment:

    Food Processor (or cheese grater), Cutting Board, Knife, Measuring Spoons, Measuring Cups, Bowl, Spoon, Muffin Tray

    Ingredients:

    Zucchini – 1 Large or 1 1/2 Cups
    Egg – 1 
    Applesauce – 3 Tablespoons
    Sugar – 1 Cup
    Vanilla – 1 1/2 Teaspoons
    Vegetable Oil – 1/2 Cup
    Flour – 1 1/2 Cups
    Salt – 1/2 Teaspoon
    Baking Soda – 1/2 Teaspoon
    Baking Powder – 1/8 Teaspoon
    Cooking Spray

    *Makes 12 muffins or fills 1 standard loaf pan

    Directions:

    1. Shred zucchini with food processor and set aside.
    2. Mix egg, applesauce, sugar, vanilla and vegetable oil together.
    3. Preheat the oven to 350°.
    4. Stir in shredded zucchini, flour, salt, baking soda and baking powder until well combined.
    5. Cover muffin tray in cooking spray.
    6. Pour batter into muffin tray.
    7. Wipe edges of muffin tray so they don’t burn.
    8. Bake for 25 minutes or until the edges of muffins start to turn brown.
    9. Let cool and enjoy!
